Step 2 – Combine remainder
Step 3 – Fold flour

Just Add Prepare
• 250 gm/ 1 block butter

• 2 cups soft brown sugar

• 300 gm/ 1 large block chocolate

• Pre-heat oven – 180C

• Melt and mix together the ingredients, in a large saucepan on low to moderate heat

• Once melted, take it off the heat

• 6 eggs beaten

• 2/3 cup plain flour

• 2/3 cup cocoa powder

• 2 cups walnuts

• Mix in the eggs into the batter

• Mix in the flour and cocoa powder

• Mix in the walnuts

• Pour into silicone baking tray or lined and greased baking tray. Top with walnuts or almonds if you so choose.

Bake
• Bake for 30 – 35 minutes

• Test with a cake tester. It’s cooked when the skewer comes out clean.

• To prevent it sticking, take the slice out early and cool on a cake rack.

When cool, slice into bite sized rectangular pieces.

Store in an airtight container.

Tips

Take care not to overcook! The key to a good brownie is the moistness. Over-baked brownies become like cake and it’ll be too dry. You want it moist and H-E-A-V-Y.

Once the brownie is out of the oven, take it out of the pan early/or remove the lining paper soonest, to stop it sticking.

Use a good quality block of chocolate. I don’t advocate using cooking chocolate.

Use a silicone baking tray to save the fuss of lining and greasing the baking pan.

If you are using a traditional metal baking tray, be certain to line and grease the baking pan.
